Intermediate Roast Training SCA Certified

Two or three intensive days on the roaster, depending on your group. You will learn to make independent choices for each coffee and conclude with a practical exam.

You learn roasting primarily by doing, so in this training, you'll spend significant time on the roaster to truly get a feel for it. With 1 or 2 participants, we do it in two days; with 3 or more participants, it becomes three days, as there's enough time to give everyone sufficient hours behind the machine. You'll learn to work independently: what coffee do you have, what choices do you make during roasting, and how do you best bring out the bean's potential?

You'll conclude with a practical exam consisting of four parts. First, you'll roast a coffee to a specified color, with a maximum margin of 5 Agtron. Then, you'll cup and must differentiate between baked, overroasted, and the reference roast through triangulation. Next, you'll receive a series of coffees that were taken out of the roaster at different times, and you'll arrange them in chronological order. For each coffee, you'll also explain which phase of the roasting process it was in at that moment.

The Foundation course is not a prerequisite, but it helps if you already have some experience with brewing coffee and understand what coffee is exactly and how it is processed from berry to roasted bean. This is truly for those who want to work professionally with roasting. If you master this level, the Professional training is the next step: there, you will delve even deeper into the chemistry and physiology of the roasting process.

Moet ik eerst de Foundation gevolgd hebben?
Nee, dat is geen vereiste. Het helpt wel als je al wat ervaring hebt met koffie zetten en weet hoe een boon van bes tot gebrande koffie wordt verwerkt.
Hoe lang duurt de training?
Dat hangt van je groep af. Met 1 of 2 deelnemers doen we het in twee dagen, vanaf 3 deelnemers wordt het drie dagen, zodat iedereen genoeg uren achter de brander krijgt.
Wat houdt het praktijkexamen in?
Vier onderdelen. Je brandt een koffie naar een opgegeven kleur met een marge van maximaal 5 Agtron, je proeft via triangulatie het verschil tussen baked, overroasted en de referentiebranding, je legt een rij koffies op volgorde van brandtijd, en je legt bij elke koffie uit in welke fase van het brandproces die zat.
Voor wie is deze training echt bedoeld?
Voor wie al ervaring heeft met branden of koffie en toe wil werken naar professioneel branden. Je leert hier zelfstandig keuzes maken per koffie, niet alleen een vast recept volgen.

Short cupping to calibrate your palate. What does roasting do to acidity, sweetness, and body?

Taking and adjusting your own shots. You will learn to change one variable at a time.

Steaming, pouring, and the basics of latte art. Also with plant-based milk.

You will go home with a written prescription, your readings and 250g of coffee.

Do I need prior knowledge?

No. Level 1 starts from scratch. If you've already been working behind a bar for a year, then look into Sensory Calibration or Reading Roast Curves.

Can I move my seat?

Up to 14 days before the training day, you can reschedule free of charge. After that, we will check if someone can take your place.

Can we bring the whole team?

Yes. For groups of 6 people or more, we prefer to organize an in-company day, either at our location or yours. Please contact us to discuss the program.

Will I receive an invoice for the company?

Yes. Enter your company details and VAT number during checkout, and you will receive the invoice in your company's name.
