Skip's Tasting Notes
I cupped this Santa Isabel on April 13, shortly after the lot arrived, and it scored 83.25. Cacao and brown spices up front, with a medium body. When I cupped it then, I still tasted some green, vegetal notes and a slight astringency in the finish, which is quite common with a newly arrived harvest. The bean has now matured for a few months and those green notes are completely gone, so what you taste now is the cacao and spiciness without those sharp edges. I roast this coffee fresh weekly, as always; the cupping above refers to the quality of the green lot itself.
