Preservation through coffee: coffee that helps restore the rainforest. Chocolatey and nutty with almond and pecan, dried fruit in the background, and with perfect extraction, even a hint of banana.

Behind this coffee lies a beautiful story. In Santa Isabel, fragmented pieces of primeval forest, currently separated by monoculture, are being reconnected to form a large corridor. Areas dominated by monoculture attract hardly any insects, birds, or other animals, while many species can coexist perfectly well with coffee. Their philosophy is 'preservation through coffee': coffee is the income source with which they can reforest and protect the area. Owner Jean-Yves is a wonderful person to talk to and works as an exporter, ensuring coffees from Santa Isabel make their way here. Treerich employs its own agronomists and brings the coffee directly to the Netherlands. In the cup, this coffee is deliciously chocolatey and nutty, with almond and a fuller, pecan-like note. In the background, there's a lovely dried fruit, and with the right extraction and that perfect sweet spot, a hint of banana even emerges.

Suitable for: filter, espresso, and moka pot.

Why we light this candle

Lightly roasted, it retains its acidity and floral notes. This requires a little more attention during brewing, which is why the brewing advice is provided above.

Skip's Tasting Notes

I cupped this Santa Isabel on April 13, shortly after the lot arrived, and it scored 83.25. Cacao and brown spices up front, with a medium body. When I cupped it then, I still tasted some green, vegetal notes and a slight astringency in the finish, which is quite common with a newly arrived harvest. The bean has now matured for a few months and those green notes are completely gone, so what you taste now is the cacao and spiciness without those sharp edges. I roast this coffee fresh weekly, as always; the cupping above refers to the quality of the green lot itself.
